Eat your veggies

So, like every woman who has recently had a baby, I'm trying to lose the weight. The good news is, it is going faster than it did the first time around. The bad news is, I still have a lot of clothes that don't fit yet.

And I love food. Food is amazing! It tastes so good. I am so sad when my food is finished!

Which brings in my vegetables. While I am not using the Weight Watchers app this time, I do like their philosophy that vegetables (and most fruits) are "free."

So, I am trying to incorporate vegetables so they are the bigger part of my lunch and dinner, and are also more of the main feature than the side dish. It takes some time to re-adjust, especially after a year during which carbs and cheese are my friends, but we are getting there.

And so I pretty my roast all my vegetables. Sometimes I grill them, but never in my life have I had a steamed vegetable and been like, "That tasted good! I feel satisfied!"

So, I take my broccoli, or my cauliflower (or eggplant, bell peppers, onions, squash, or some combination of all of them) and toss them in just enough olive oil to coat, and I pop them in the oven somewhere between 400 and 450 degrees for about 20-30 minutes and usually I use a little lemon juice, and definitely some sea or kosher salt, and sometimes a little balsamic or grated parmesan, and I have a plate of veggies that actually doesn't make me want to cry.
