Getting back to "normal"

Five months was a magic age with both our children. It was survival mode for the first 5 months. You slept when you could, ate what you could find and just generally didn't leave the house very much, and then all of a sudden, the sleep got better, you felt better, you had more time and it didn't feel like treading water anymore.

So, Connor is five and a half months and we are here. He is a really easy baby except he is a beast between 7 and 8 pm, otherwise known as "bedtime" and only I, as a nursing mom, seem to have the tools to be able to handle him. 

Needless to say, we can't really go out to dinner these days. We tried about 10 days ago and it was an epic fail. Connor screamed pretty much the whole time, so Claire couldn't go to bed either. Awesome.

So, we are eating at home and these are the things we are doing:

1) I tried Blue Apron and I LOVE IT! I got a 30% off promotion for the first week and I am sold. We will probably end up doing this once a month. It is a lot of packaging but the food was really good and fresh and do you know how much TIME it saves when you don't have to meal plan, measure and go to the grocery store? Heaven.

2) We do Raw Girls Memphis about once a month too.  They clearly only cook raw food but it is so tasty, and healthy and we love their juices too. I again don't have the time or patience to buy a juicer and the many pounds of produce you need to juice but their juices are perfect and I highly recommend their service.

3) And I'm cooking too! Well, Claire doesn't really nap anymore so it is a lot of "cooking" with toddler assistance - she helped me make icing for our Easter carrot cake the other day and what should have taken 10 minutes took 45, but better than she is involved than causing trouble somewhere within these four walls. I found this recipe for Korean beef and while my doubts about Pinterest recipes are well documented, it was really good!

4) Other things that have been on the menu around here that I'd do again:
Goat cheese turnovers
Asian Ground Pork and Spinach (pictured)
Poached Eggs with Brussels Sprouts and Bacon (pictured)

How is this the first time I've seen and read your blog? I love it! So inspiring when it comes to healthy eating in general, and being a busy mom to toddlers and eating healthy at the same time. I want to try Blue Apron and Raw Girls when we get back to the States (this summer). Yeah! I will have to check your blog regularly. You are a wonder-mama! Hope you all are doing well!
